3. Sauté the Aromatics
In the same skillet, heat an additional tablespoon of olive oil (if needed) over medium-high heat. Add the diced onions, poblano pepper, and jalapeño. Cook for about 5 minutes, stirring occasionally, until the vegetables soften.
4. Add the Corn and Tomatoes
Stir in the drained corn and diced plum tomatoes. Continue to cook for another 5 minutes, allowing the tomatoes to release their juices and blend with the other ingredients.
5. Incorporate the Zucchini and Squash
Add the sliced zucchini, yellow squash, minced garlic, salt, black pepper, oregano, and ground cumin. Stir everything together to evenly distribute the seasoning. Cook for another 5 minutes, stirring occasionally.
6. Simmer the Mixture
Pour in 1/4 cup of water, lower the heat to a gentle simmer, and cover the skillet with a lid. Let the mixture cook for 5 minutes, allowing the steam to soften the vegetables further while enhancing their flavor.
7. Add the Cheese and Milk
Remove the lid and stir in the shredded cheddar cheese and milk. Continue stirring until the cheese melts completely, creating a creamy consistency. If the mixture appears too thick, add a splash of milk to loosen it up.
8. Reintroduce the Protein and Garnish
Return the cooked chicken or ground beef to the skillet, mixing it well with the vegetables. Once everything is heated through, remove the skillet from the heat. Garnish with chopped cilantro and crumbled cotija cheese, if desired.
9. Serve and Enjoy
