Instructions

1. Prepare the Ingredients

Start by thoroughly washing and drying the potatoes. Peeling them is optional, as the skins add texture and nutrients, but if you prefer a softer bite, peel them before dicing. Cut the potatoes into small, evenly sized cubes, about ½-inch in size. This ensures even cooking and a perfect tender texture.

Place the diced potatoes in a large bowl and rinse them under cold water. This step removes excess starch, preventing the potatoes from becoming too sticky while baking. Drain well and pat them dry with a clean towel.

2. Mix the Ingredients

In the same bowl, add the salsa, RoTel diced tomatoes and green chilies, and half of the shredded cheddar cheese. Stir everything together, making sure the potatoes are evenly coated with the mixture. The combination of salsa and RoTel provides a flavorful base that soaks into the potatoes as they bake.
