Begin by peeling and chopping your yucca. If using fresh yucca, remove the thick brown outer skin and the pinkish layer underneath.
Cut into 2–3 inch chunks. Be sure to remove any fibrous core in the center after boiling.
Place the yucca in a large pot of salted water.
Bring to a boil and cook for 20–25 minutes, or until fork-tender.
Drain the yucca and allow it to cool.
Once cooled, cut into bite-sized pieces and discard any tough stringy cores.
If not using rotisserie chicken, you can poach chicken breasts by simmering them in lightly salted water for 15–18 minutes or until fully cooked.
Once done, let it cool slightly, then shred or chop into bite-sized pieces.
In a small bowl, combine the mayonnaise, lime juice, olive oil, mustard, minced garlic, and smoked paprika or cumin.
Whisk until smooth.
Taste and season with salt and pepper as needed.
In a large mixing bowl, add the cooled, chopped yucca, shredded chicken, red bell pepper, red onion, and celery.
Pour the dressing over the mixture.
Gently toss everything until well combined, ensuring the yucca pieces are coated but not mashed.
Taste for seasoning and adjust with additional salt, pepper, or lime juice.
Optionally stir in any extra ingredients like boiled eggs or corn.
Cover the bowl and refrigerate the salad for at least 30 minutes to 1 hour to allow the flavors to meld.
