  • 3 tablespoons Grand Marnier (or other orange liqueur)

  • 2 teaspoons lime zest
  • 4 large eggs, room temperature

  • ¼ cup granulated sugar
  • 1 tablespoon freshly squeezed lime juice

Instructions

1. Prepare the Crust:

  • Place the vanilla wafer cookies in a food processor and pulse into fine crumbs.
  • Transfer the crumbs to a bowl and mix in the melted butter until evenly combined.
  • Press the mixture firmly into the bottom of a 9-inch springform pan using the base of a glass or measuring cup.
  • Bake the crust for 8–10 minutes until lightly golden, then set it aside to cool while you prepare the filling.

2. Make the Filling:

  • In a large mixing bowl, beat the softened cream cheese until smooth and lump-free.
  • Add sugar and continue beating until fully incorporated.
  • Blend in the sour cream, tequila, orange liqueur, lime juice, and lime zest.
  • Add eggs one at a time, mixing on low speed after each addition. Avoid overmixing to reduce air bubbles, which can cause cracking.
  • Pour the filling into the prepared crust, smoothing the top with a spatula.

3. Bake the Cheesecake:

  • Place the pan on a baking sheet to catch any drips.
  • Bake at 325°F (163°C) for 50–60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to gradually cool, which helps prevent cracks.

4. Prepare the Topping:

  • While the cheesecake is cooling, mix the sour cream, sugar, and lime juice in a bowl until smooth.
  • Carefully spread the topping over the slightly cooled cheesecake.

5. Chill Completely:

  • Cover and refrigerate the cheesecake for at least 4 hours, preferably overnight. This allows it to fully set and develop its flavor.

6. Garnish and Serve:

  • Before serving, decorate with lime zest, lime slices, or whipped cream if desired.
  • Run a knife around the edge of the pan before removing the springform sides for a cleaner presentation.

Notes

1. Use Room Temperature Ingredients

  • Cream cheese, sour cream, and eggs should be at room temperature. Cold ingredients don’t blend smoothly and can lead to a lumpy batter.

2. Don’t Overmix the Batter

  • Overmixing incorporates too much air, which can cause the cheesecake to rise and crack while baking. Mix on low speed and only until ingredients are combined.

3. Water Bath Optional

  • Although not used in this recipe, you can use a water bath to create a more even bake and minimize cracks. Wrap the pan in foil to keep water out.

4. Let It Cool Gradually

  • Avoid sudden temperature changes by cooling the cheesecake slowly in the oven with the door ajar, then moving it to the refrigerator.

5. Plan Ahead

  • Cheesecake needs several hours to chill and set, so make it the day before you plan to serve it.

6. Customize the Liquor
