4 large bell peppers (red, yellow, or orange for sweeter flavor)
1 pound ground beef or ground chicken
1 cup cooked rice (white or brown)
1 cup canned black beans, rinsed and drained
1 cup canned diced tomatoes, drained
1/2 cup corn kernels (fresh, frozen, or canned)
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Fresh cilantro for garnish (optional)
Lime wedges for serving (optional)
Preparation:
Preheat the oven to 375°F (190°C).
Wash the bell peppers and slice off the tops. Remove seeds and membranes carefully without breaking the peppers.
Cook rice in advance or use leftover rice for convenience.
Rinse and drain canned black beans and diced tomatoes thoroughly to prevent watery filling.
