Ingredients

Scale

For the Cake:

  • ½ cup (1 stick) unsalted butter, at room temperature
  • 1 (15.25 oz) box lemon cake mix
  • 1 (3.2 oz) box instant lemon pudding mix
  • 4 large eggs
  • 1 (10 oz) can frozen margarita mix, thawed
(substitute: frozen limeade concentrate if margarita mix is unavailable)
  • 3 tablespoons fresh lime juice
  • Zest of 1 lime

For the Glaze:

  • 1½ cups powdered sugar
  • 2 tablespoons fresh lime juice

Preparation Notes:

  • Ensure all refrigerated ingredients are at room temperature before mixing.
  • Grease your bundt pan thoroughly to prevent sticking.
  • Zest the lime before juicing it for best results.

Instructions

  • Preheat the oven to 350°F (175°C).
    • This ensures your oven is at the right temperature when you’re ready to bake.
  • Grease a bundt pan thoroughly.
    • Use non-stick baking spray with flour, or grease with butter and dust with flour.
  • Cream the butter.
    • In a large mixing bowl, beat the room temperature butter until it’s smooth and slightly fluffy.
  • Add cake and pudding mixes.
    • Pour in the lemon cake mix and lemon pudding mix. Mix gently to combine with the butter.
  • Add wet ingredients.
    • Crack in the eggs, then add the thawed margarita mix (or limeade), lime juice, and zest.
  • Mix the batter.
    • Start on low speed until ingredients are just combined, then increase to high speed for about 2 minutes to fully incorporate and aerate the batter.
  • Pour the batter into the prepared bundt pan.
    • Spread the top evenly with a spatula.
  • Bake for 45–50 minutes.
    • The cake is done when a toothpick inserted into the center comes out clean or with a few crumbs.
  • Cool the cake.
    • Let it rest in the pan for 15 minutes before inverting onto a wire rack. Cool completely before glazing.
  • Make the glaze.
    • In a small bowl, whisk the powdered sugar with lime juice until smooth. Adjust the consistency if needed by adding more sugar or juice.
  • Drizzle glaze over cooled cake.
    • Let it naturally drip down the sides for an elegant presentation.

Notes

  • Room temperature ingredients:
    • Cold butter or eggs can cause uneven mixing. Leave them out for 30–60 minutes before starting.
  • Don’t overmix the batter:
    • Once you’ve incorporated the ingredients, stop mixing. Overmixing can lead to a dense texture.
  • Use a high-quality bundt pan:
    • Some decorative bundt pans may stick more than others. Always grease thoroughly, especially if the pan has ridges.
  • Cool properly before glazing:
    • Glazing a warm cake will cause the glaze to melt. Always wait until it’s completely cool.
  • Zesting tip:
    • Only zest the green part of the lime skin. The white part (pith) is bitter.
  • Alternate flavors:
    • If you prefer a subtler citrus flavor, reduce the lime juice slightly and add a teaspoon of vanilla extract.
  • Avoid opening the oven door early:
    • Doing this before the cake is set can cause it to collapse. Wait at least 30 minutes before checking.
  • To test doneness:
    • Insert a toothpick into the center. If it comes out clean, it’s done. If wet batter sticks, bake 5 more minutes.
